This is what I'm having for dinner with the addition of black pepper and sour cream. I love that the bottom potato pancake looks a little like a crab.

Oh man, that looks so good. Some recipes I've seen make the potato all pureed and smooth. I much prefer them coarsely grated like that.
Now that puree thing is just wrong. Ick!
My boss brought in potato latkes yesterday as a treat -- man, I love those things. Of course, it's really hard to do bad things to potatoes.
